Leg of pork with roast pears and rosemary / Perna de porco assado com peras e rosmaninho



Ready in 4.30 hours, including 3 hours in the oven










Serves 6Ingredients:

3kg boned leg of pork
olive oil
2 sprigs fresh rosemary, leaves chopped
For the honey sauce
25g butter
1 carrot, finely chopped
1/2tsp black peppercorns
2tbsp white wine vinegar
200ml dry white wine
300ml fresh chicken stock
For the pears
50g butter
4tbsp dark muscovado sugar
4tbsp balsamic vinegar
6 slightly under ripe pears, halved ad cored but not peeled








 Preparation:
1 Preheat the oven to fan 210C/conventional 230C/gas 8. Score the skin of the pork with a very sharp knife in slashes about 5mm apart, cutting through the skin but not right through the fat. Rub a little oil all over the meat with your hands, then scatter with the rosemary and season well.
2 Re-shape the joint, tie it at intervals with string then put it in a roasting tin and rub the skin first with oil and then generously with salt. Roast for 30 minutes to get the crackling going, then turn the oven down to fan 170C/conventional 190/C gas 5 and roast for a further 2 hours 40 minutes for medium or 3 hours for well done. Don`t baste or you won`t get nice crispy crackling.
3 To make the honey sauce, melt the butter and add the carrot, celery and onion. Cook in the butter until they are just starting to brown, then quickly add the peppercorns. Spoon in the honey, increase the heat and cook until you smell the honey caramelising, the add the vinegar - the mixture will split. Pour in the wine and boil to reduce until there is only a little liquid left. Stir in the stock and boil to reduce again until you have a slightly syrup gravy. Strain and set aside.
4 Start the pears 35 minutes before the pork is due to come out of the oven. Melt the butter, sugar and vinegar in a large frying pan, toss in the pears and turn them in the mixture for a minute or two until coated.
5 Put the pears to roast with the pork for about 25 minutes and spoon over the pears the sugar mixture. Serve the pork on a platter with the pears around it. Skim the fat off the juices in the roasting tin then tip the juices into the honey sauce to finish the gravy.

Make ahead: The caramelised honey sauce can be made ahead of serving the meat.
In the autumn, replace the pears with apple halves. If you like you can add some plums as well.




Confecção 4.30 hours, including 3 hours no forno



Para 6 pessoas
3 kg the perna de porco sem osso
azeite de oliva
2 raminhos de rosmaninho fresco
Para o molho de mel
25 grs de manteiga
1 cenoura, cortados aos bocadinhos
1 ramo de aipo, cortado aos bocadinhos
1 cebola, cortada aos bocados
1/2 colher de chá de pimenta preta em grão

2 colheres de sopa de mel
2 colheres de sopa de vinagre de vinho branco
200 ml de vinho branco
300 ml de caldo de galinha
Para as peras
50 grs de manteiga
4 colheres de sopa de açucar mascavado
4 colheres de sopa de vinagre bálsamico
6 peras, ligeiramente maduras e cortadas aos meios, tire o caroço mas não pele


1 Aqueça o forno a 210C / gas 8. Faça cortes na pele do porco com 5mm entre corte. Depois unte o porco com azeite, sal, pimenta preta e o rosmaninho.
2 Ata a carne com fio de cozinha e levar ao forno durante 30 minutos, depois baixe a temperatura de forno para 190C e continue a assar por mais 2 horas e quarenta minutos a 3 horas. Não regue o porco, para que a pele fique bem estaladiça.
3 Para fazer o molho de mel, derreta a manteiga, junte a pimenta em grão o mel até ficar caramelisado, depois junte o vinagre e o vinho e deixe ferver até ficar somente com um pouco de liquido. Junte o caldo de galinha e volte a ferver outra vez.
4 Começe a tratar das peras 35 minutos antes do porco estar assado.
Derreta a manteiga, o açucar e o vinagre numa frigideira e envolva as peras muito bem nesta mistura.
5 Coloque então as peras com o porco na assadeira e deite por cima das peras a mistura de açucar que ficou na frigideira e asse durante 25 minutos.
Sirva o porco rodeado pelas peras.
Para acabar o molho de mel, retire alguma gordura da assadeira do porco e junte ao molho de mel, leve ao lume durante uns quantos minutos e se desejar verifique se o molho necessita ser apurado de sal e pimenta.


Saiba que: O molho de mel pode ser feito antecipadamente.
Se desejar na época outonal substituia as peras por maças e se for apreciador de ameixas pode juntá-las ao assado, que fica muito bom.
