Rice & Red Beans with Chicken / Frango com Feijão Encarnado & Arroz




Takes 35-45 minutes
Serves 4
2 tbsp olive oil
2 large skinless chicken breasts, cut in cubes
1 onion, sliced
1 red pepper, sliced
1 red chilli, seeded and chopped
2 tbsp chopped coriander
juice of 1 lime
1 tsp sugar
200g can chopped tomatoes
2 tsp tomato purée
1 tsp cornflour, dissolved in 1 tbsp water
pinch of paprika
FOR THE RICE
225g long-grain rice
2 bay leaves
2tbsp olive oil
400g can red kidney beans, drained and rinsed
TO SERVE
1 tomato, sliced
chopped fresh coriander to garnish

1 First cook the rice in boiling water with the bay leaves, olive oil, salt. When the rice is nearly cooked tip the red kidney beans, there is no need to stir. Then stir gently (with a fork) the beans and rice together, remove the bay leaves.
2 While the rice is cooking, heat the oil in a large deep sauté pan, add the chicken, onion and peppers and fry, stirring occasionally, for 10 minutes until the chicken is cooked and the vegetables have softened. Stir in the chilli, coriander, lime juice, sugar, tomatoes, tomato purée, cornflour and paprika and simmer until the juices have thickend slightly.
Pile the rice and beans onto a serving dish. Spoon over the chicken sauce, lay the tomatoes on top and scatter over the chopped fresh coriander. Serve.

Para 4 pessoas
2 colheres de sopa de azeite de oliva
2 peitos de frango sem pele, cortados aos cubos
1 cebola, cortada ás rodelas finas
1 pimento vermelho, cortado ás tiras
1 malagueta vermelha, picada
2 colheres de sopa de coentros, picados
sumo de 1 lima
1 colher de chá de açucar
1 lata pequena de tomate picado
2 colheres de chá de pure de tomate
1 colher de chá de maizena, disolvida numa colher de sopa de água
paprika a gosto
PARA O ARROZ
225 grs de arroz
2 folhas de louro
2 colheres de sopa de azeite de oliva
1 lata (400 grs) de feijão encarnado, escorra a água da lata e passe o feijão por água
PARA SERVIR
1 tomate cortado ás rodelas

1 Coza o arroz em água e sal com as folhas de louro e o azeite. Antes do arroz estar completamente cozido, junte o feijão de lata, não é necessário mexer o arroz a este ponto. Quando o arroz estiver cozido, utilizando um garfo misture o feijão ao arroz, retire as folhas de louro e jogue fora.
2 Enquanto o arroz estiver cozerendo, aqueça uma frigideira ao lume, junte o azeite e frite o frango, a cebola e o pimento vermelho, até tudo adquirir uma cor douradinha. Depois junte a malagueta, os coentros, o sumo da lima, o açucar, os tomatoes de lata, o pure de tomate, a maizena e a paprika, deixe cozinhar em lume brando durante alguns minutos para apurar.
3 Sirva o arroz num prato, deite por cima o frango e o molho, decore com as rodelas de tomate e salpique com um pouco mais de coentros. Espero que goste.
