Brown sugar meringues with red wine plums / Merengues com ameixas em vinho tinto

The plums and meringue can be prepared ahead, making this perfect for dinner parties.


Preparation 25 minutes 
Cooking - 1.30 hrs
Serves 6
1 tsp cornflour
1 tsp wine vinegar
1 tsp vanilla extract
3 egg whites
100 g caster sugar
For the Plums
200 ml red wine
85 g light muscovado sugar
1 cinnamon stick
9 large ripe plums, halved and stoned
400 g crème fraîche

1 Heat the oven to 140C/fan 120C/gas 1. Line a large baking sheet with baking paper. Blend together the cornflour, vinegar and vanilla to make a paste. Whisk the egg whites until they are stiff and glossy, then whisk in the sugar in three goes, adding a little paste and whisking back to firm peaks each time. Keep whisking until the meringue is thick and heavy.
2 Spoon six meringues heaps onto a baking sheet, spaced apart, then shape into nests by making dips in the centres with the back of a spoon. Bake for 1 hour, then turn off the oven and leave to cool in the oven for a further hour.
3 Put the wine, sugar and cinnamon stick in a medium pan and bring to the boil, stirring to dissolve the sugar. Add the plums, then poach gently for 4-5 minutes until just tender. Remove the plums with a slotted spoon, peel off the skins, then set aside.
4 Increase the heat under the sauce and boil hard until reduced to a thick syrup, about 5 minutes. Pour into a jug, leave to coll.
5 To serve, set the meringue nests on serving plates and spoon the crème fraîche into the centres. Place three plum halves on each and drizzle over the sauce. Serve without delay.






Os merengues e as ameixas podem ser preparados de antemão. Esta sobremesa é óptima para festas.

Preparação 25 minutos 
Confecção 1.30 horas
Para 6 pessoas
1 colher de chá de maizena
1 colher de chá de vinagre de vinho
1 colher de chá de extracto de baunilha
3 claras de ovos
100 grs de açucar refinado
50 grs de açucar mascavado
Para as ameixas
200 ml de vinho tinto
85 grs de açucar mascavado
1 pau de canela
9 ameixas maduras, cortadas ao meio e retirar o caroço
400 grs de creme fraîche

1 Aqueça o forno a 140C, ou 120C/gas 1. Forre uma bandeja de ir ao forno com papel vegetal. Misture a maizena, o vinagre e a baunilha até obter uma pasta. Bata as claras em castelo, depois junte o açucar e a pasta com a maizena. Bata até as claras estarem bem firmes.
2 Coloque na bandeja, seis redondelas de claras, que serão os seus futuros merengues, tem que deixar espaços entres os merengues. Com a parte de trás de uma colher, faça um ninho em cada redondela. Leve ao frono durante 1 hora, depois desligue o forno e deixe os merengues dentro durante mais 1 hora.
3 Coloque o vinho, o açucar e o pau de canela numa panelinha e ferva, depois junte as ameixas e escalfe durante uns 4 a 5 minutos, cuidado para não desfazer as ameixas. Retire as ameixas do vinho, deixe arrefece-las um poquinho e depois retire-lhes a pele e ponha de lado.
4 Leve o vinho novamente ao lume até obter uma espécie de xarope, isto leva á volta de 5 minutos. Coloque o xarope num recipiente e deixe arrefecer.
5 Para servir, coloque os merengues em pratinhos individuais, coloque o creme fraîche no meio de cada merengue e coloque três metades de ameixas por cima do creme e sirva com o xarope. Sirva de imediato.
