Today, I am posting these delicious and great cashew nut cookies specially for Rebecca Subbiah who is a British lady living in America. To be completely honest I am very pleased that Rebecca contacted me asking if I would consider doing a guest post for Chow and Chatter. How would I not? I ♥ her work.
These cookies are excellent to serve with tea or coffee. To have a nice yellow coloured egg wash for brushing, you can add a few drops of yellow colouring into the beaten egg yolk.
Ingredients:
150 g unsalted butter
100 g icing sugar, sifted
2 eggs
300 g plain flour, sifted
1 tsp baking powder, sifted with flour
100 g cashew nuts, toasted and ground
cashew nut to top
1 egg yolk
Method:
1 Preheat oven at 180ºC.
2 Beat butter, icing sugar and eggs until light and creamy. Fold in flour, baking powder and ground cashew nuts and mix well to form a soft dough.
3 Lightly flour working surface and dough. Roll dough.
4 Use a cookie cutter and cut out the cookies. Place cookie dough on greased baking tray.
5 Press a cashew nut on top of each cookie for decoration. Brush cookies with egg glaze.
6 Bake in preheated oven for 5 to 7 minutes until golden brown. Cool on wire racks before storing in airtight container.

Umas bolachinhas bem deliciosas e bastante fáceis de fazer, excelentes para acompanhar com chá ou café.
Se desejar que as bolachinhas fiquem com uma corzinha bem amarela, adicione á gema de ovo umas gotinhas de corante alimentar amarelo.
Ingredientes:
150 g de manteiga sem sal
100 g de açúcar glacê, peneirado
2 ovos
300 g de farinha para bolos sem fermento, peneirada
1 c. de chá de fermento em pó, peneirado com a farinha
100 g de castanha de caju torradas e trituradas
castanha de caju para decorar
1 gema de ovo
Método:
1 Aqueça o forno a 180ºC.
2 Bata a manteiga, o açúcar e os ovos até a massa ficar cremosa. Adicione a farinha, o fermento em pó e castanha de caju triturada, misture tudo bem.
3 Coloque a massa sobre uma superficie levemente enfarinhada e estender a massa.
4 Corte biscoitos com um cortador de biscoitos e coloque numa bandeja de forno.
5 Pressione uma castanha de caju em cima de cada biscoito e pincele com a gema de ovo.
6 Asse em forno pré-aquecido por 5-7 minutos, até dourarem. Colocar numa grelha de cozinha até arrefecerem por completo e guardar num recipiente hermético.

Fue un gran placer ter aceptado la invitación de Rebecca Subbiah para cocinar una receta para su Blog Chow and Chatter
Estas galletas de anacardos son deliciosas y muy fáciles de hacer. Ideales para merendar, acompañar un café o un té.
Si deseas que las galletitas queden con un colorzito amarillo, basta agregar a la yema de huevo unas gotitas de colorante alimentario amarillo.
Ingredientes:
150 g de mantequilla sin sal
100 g de azúcar glaseado, tamizado
2 huevos
300 g de harina sin levadura, tamizada
1 cucharadita de polvo de hornear, tamizado con la harina
100 de anacardos, tostadas y trituradas
castañas de cajú para decorar
1 yema de huevo
Método:
1 Precaliente el horno a 180ºC.
2 Batir la mantequilla, azúcar y los huevos hasta que la masa esté cremosa. Agregue la harina, polvo de hornear y los anacardos triturados y mezclar todo bien.
3 Coloque la masa sobre una superficie ligeramente enharinada y estender con un rodillo de cocina.
4 Cortar las galletas con un cortador de galletas y poner en una bandeja de horno con papel de hornear.
5 Adornar las galletitas con anacardos y con una brocha de cocina, pincelar las galletas con la yema de huevo.
6 Hornear durante 5-7 minutos, hasta que empiezan a quedar tostadas, se retiran del horno y se dejan enfriar. Una vez enfriadas se pueden sacar de la bandeja y ya están listas, guardar en un recipiente hermético.

ReplyDeleteI recently made a dish that called for roasted cashews and fell in love with the flavor. I ended up roasting all the cashews that were left in the can and eating them as a snack. These cookies are beautiful~! I just know I'd love them. I will absolutely be making these soon.
