Dear friends and readers, I must admit nearly not posting this recipe.
Either my brain is playing tricks on me or there is really something mysterious about these muffins shape.
I can only blame the muffin pan, but one thing is for sure they are absolutely delicious and "fun to look at".
What do you think?
Prepare ahead: Measure out the cranberries, flour, baking powder, bicarb and sugar the night before, so that all you’ve got to do is mix together the orange juice, milk and eggs, melt the butter and combine all the ingredients on Christmas morning itself.
Ingredients for the muffins:
200g plain flour
3 teaspoons baking powder
½ tsp bicarbonate of soda
75g demerara sugar
good grating fresh nutmeg
1 clementine or small orange
50ml milk
60g unsalted butter, melted
1 large egg
150g dried cranberries
12-bun muffin tin with papers
Ingredients for the topping:
2 tsp demerara sugar
½ tsp ground cinnamon
For the muffins:
1 Preheat the oven to 200ºC/Gas mark 6.
2 In a large bowl, combine the flour, baking powder, bicarb and sugar, and grate over a generous amount of fresh nutmeg. Squeeze the orange or clementine juice into a measuring jug, then pour in milk on top till it comes up to the 150ml mark. Add the melted butter and the egg, and beat to combine. Pour the jug of liquid ingredients into the bowl of dry ingredients and stir till the ingredients are more or less combined, remembering that a lumpy batter makes light muffins.
3 Last of all, lightly fold in the cranberries and fill the muffin cases or cups. The amount of cranberries specified here makes for heavily fruited muffins; if you want them sparser, use half the amount.
For the topping:
1 Mix together the demerara sugar and ground cinnamon and sprinkle over the tops of the muffins. Stick them in the oven and bake for 20 minutes, when golden-brown they are ready to be eaten, or broken open and spread them with unsalted butter and marmalade.

Ou o meu cérebro está-me fazendo truques ou há mesmo qualquer coisa de misterioso acerca destes muffins.
Neste momento não encontro a resposta certa, por isso só posso culpar a forma que utilizei para fazê-los.
Mas uma coisa é certa, estes muffins são absolutamente deliciosos e bem divertidos de olhar.
O que é que acham?
Prepare de antemão: Pesar os mirtilos, farinha, fermento, bicarbonato e o açúcar na noite anterior, assim que de manhã tudo o que terá que fazer é misturar o sumo de laranja, leite e ovos, derreter a manteiga e juntar aos ingredientes secos pela manhã.
Ingredientes para os muffins:
200g de farinha para bolos, sem fermento
3 c. de chá de fermento em pó
½ c. de chá de bicarbonato de sódio
75g de açúcar demerara
noz-moscada q.b.
1 laranja pequena
50ml de leite
60g de manteiga sem sal, derretida
1 ovo grande
150g de passas de mirtilos
1 forma para muffins forrada com 12 forminhas de papel
Ingredientes para a cobertura:
2 c. de chá de açúcar demerara
½ c. de chá de canela em pó
Para os muffins:
1 Pré-aqueça o forno a 200ºC/Gás 6.
2 Numa tigela grande, misture a farinha, fermento, bicarbonato e o açúcar. Rale uma quantidade de noz-moscada sobre a mistura de farinha. Num jarro, esprema o sumo de laranja e junte de seguida o leite até obter cerca de150ml. Adicione á mistura de leite a manteiga derretida e o ovo. Verta os ingredientes do jarro sobre os ingredientes secos e envolva tudo bem.
3 Por fim, adicione as passas de mirtilos e coloque a massa nas forminhas de papel.
Para a cobertura:
1 Misture o açúcar demerara e canela em pó e polvilhe sobre a massa dos muffins. Coloque no forno e asse durante 20 minutos, ou até que estejam dourados. Se desejar sirva os muffins quentinhos barrados com manteiga sem sal e marmelada.

O mi cerebro me está jugando una mala pasada o hay algo misterioso acerca destas magdalenas.
En este momento no puedo encontrar la respuesta correcta, por lo que sólo se puede culpar a la fuente que utilize para hacerlas.
Pero una cosa es cierta, estas magdalenas son absolutamente deliciosas y bien divertidas de mirar.

Preparar de antemano: Pesar los arándanos, la harina, el polvo de hornear, bicarbonato de sodio y el azúcar la noche anterior, por la mañana todo lo que tienes que hacer es mezclar el jugo de naranja, leche y huevos, la mantequilla ablandada y mezclar todo.
Ingredientes para los muffins:
200g de harina para pasteles, sin levadura
3 cucharaditas de polvo para hornear
½ cucharadita de bicarbonato de sodio
75g de azúcar demerara
nuez moscada, rallada al gusto
1 naranja pequeña
50ml de leche
60g de mantequilla sin sal, ablandada
1 huevo grande
150 g de pasas de arándanos
una fuente para 12 muffins y papelitos rizados
Ingredientes para la cobertura:
2 cucharaditas de azúcar Demerara
½ cucharadita de canela en polvo
Para los muffins:
1 Precaliente el horno a 200ºC/Gas 6.
2 En un tazón grande, mezclar la harina, el polvo de hornear, bicarbonato de sodio y azúcar. Añadir la nuez moscada a la mezcla de harina. Exprimir el jugo de naranja y agregue la leche hasta tener aproximadamente de 150ml. Agregar a la mezcla de leche y jugo de naranja la mantequilla y el huevo. Mezclar to bien.
3 Por último, añadir las pasas de arándanos y añada a la masa.
Para la cobertura:
1 Mezclar el azúcar demerara y la canela y espolvoree sobre la masa. Hornear por 20 minutos o hasta que estén doraditas. Si desea servir los muffins calentitos con mantequilla sin sal y mermelada.
