250g / 1¼ cups sugar
2 eggs plus 1 egg yolk
juice of 1 lime
2 tsp lime zest
250g / 2 cups plain flour
1 tsp baking powder
½ tsp salt
icing sugar for topping

1 Preheat oven to 175ºC / 350°F.
2 In a large bowl, cream butter and sugar until fluffy. Add eggs and egg yolk, beating until creamy. Beat in lime juice and zest just until combined.
3 Stir in flour, baking powder, and salt, mix well. Refrigerate dough 60 minutes, until firm or if you wish just pope it in the freezer for about 25 mins.
4 Shape dough into 2.5cm / 1-inch balls and place 2.5cm /1 inch apart on cookie sheets.
5 Bake 10 to 12 minutes, or until light golden. Transfer to wire rack. Let them cool completely. Dust cookies lightly with icing sugar through a hand strainer.

Here's a simple trick to soften butter quickly using some wax paper and a rolling pin.
Method:
Just put the stick of butter between two large pieces of wax paper. Using a rolling pin, press down on the butter. Roll it out they way you would roll out a pie crust. When the butter is about ¼ inch thick / 5mm, lift off the wax paper and peel away the butter (before it gets too soft to peel).
