With its intriguing sweet-savoury flavours and its subtle, complex combination of spices, Moroccan cooking is often considered one of the world's finest cuisines.
If you don't have a Tagine, then a large saucepan or soup pot with a cover will work just fine.
Serves 4
Ingredients:
1 can of chickpeas, drained & washed
12 vine ripened cherry tomatoes
1 medium butternut squash, peeled & cut into 4 cm chunks
1 onion, finely chopped
4 cloves of garlic, finely chopped
2 tbsp of finely chopped parsley
2 tbsp of finely chopped coriander and more for garnish
4 tbsp olive oil
½ tsp ground cumin
½ tsp ground turmeric
½ tsp cayenne pepper
1 tsp paprika
2 tsp of tomato paste
½ tsp of sugar
salt freshly ground black pepper
2 cups of water
1 Finely chop the coriander and parsley. Set Aside. Peel the squash and cut into 4 x 4 cm pieces.
2 Finely chop the onion and garlic. Heat the oil in the pot and add the onion. Cook over a low heat until soft.
Add the garlic and cook for about 20 seconds, then add the cumin, tumeric and cayenne pepper. Cook for 30 seconds, stirring continuously. Add the paprika, tomato paste, sugar and half the coriander, parsley, salt and pepper. Stir.
3 Add the butternut squash and the water, stir carefully and cover with the lid. Once simmering, turn down the heat, cook for 25 minutes, then add the tomatoes and the drained chickpeas and cook covered for 10 minutes.
4 Just before serving, garnish tagine with more coriander or parsley and serve with couscous.

Se não tiver uma tajine, utilize um tacho ou panela com tampa.

Ingredientes:
1 lata de grão de bico, escorrido e lavado
12 tomates cereja maduros
1 abóbora butternut, descascada e cortada em pedaços de 4 cm
1 cebola bem picadinha4 dentes de alho, finamente picados
2 c. de sopa de salsa picada
2 c. de sopa de coentros picados
4 c. de sopa de azeite
½ c. de chá de cominho moídos
½ c. de chá de cúrcuma em pó
½ c. de chá de pimenta caiena
1 c. de chá de pimentão / páprica
2 c. de sopa de tomate concentrado
½ c. de chá de açúcar
sal e pimenta preta recém moída
2 chícaras de água
1 Pique os coentros e a salsa. Reserve. Descasque a abóbora e corte em pedaços de 4 cm.
2 Pique a cebola e o alho. Aqueça o azeite numa panela e adicione a cebola. Refogue em lume brando até ficar macia. Adicione o alho e cozinhe por cerca de 20 segundos, em seguida, adicione o cominho, pimenta caiena e cúrcuma. Cozinhe por 30 segundos, mexendo continuamente. Adicione o pimentão, concentrado de tomate, açúcar, coentros, salsa, sal e pimenta, envolva tudo bem.
3 Adicione a abóbora e acrescente a água, tape e coza durante 25 minutos. Depois acrescente os tomates e o grão de bico escorrido e coza durante 10 minutos com a panela tapada.
4 Antes de servir, polvilhe com mais coentros ou salsa e servir com cuscuz.

Ingredientes:
1 lata de garbanzos, escurridos y enjuagados
12 tomates cereza maduros
1 calabaza butternut pelada y cortada en trozos de 4 cm
1 cebolla, finamente picada 4 dientes de ajo, finamente picados
2 cucharadas de perejil picado
2 cucharadas de cilantro picado
4 cucharadas de aceite de oliva
½ cucharadita de comino en polvo
½ cucharadita de cúrcuma en polvo
½ cucharadita de pimienta de Cayena
1 cucharadita de pimentón
2 cucharadas de tomate concentrado
½ cucharadita de azúcar
sal y pimienta negra recién molida
2 tazas de agua
1 Picar el cilantro y el perejil. Reservar. Pelar la calabaza y cortar en trozos de 4 cm.
2 Picar la cebolla y el ajo. Calentar el aceite en una cacerola y agregar la cebolla. Saltear a fuego lento hasta que este blanda. Agregue el ajo y cocine por unos 20 segundos, a continuación, agregue el comino, la pimienta de Cayena y la cúrcuma. Cocine durante 30 segundos, revolviendo continuamente. Añadir el pimentón, concentrado de tomate, azúcar, cilantro, perejil, sal y pimienta, envolver bien.
3 Añada la calabaza y añadir el agua, tapar y cocinar por 25 minutos. A continuación, agregue los tomates y los garbanzos escurridos y cocinar por 10 minutos con la cacerola tapada.
