Carrots have been included in sweet recipes in Britain since Medieval times. Because carrots provided a cheaper and more easily available alternative to other sweeteners, their use was encouraged again during the Second World War, at the time of rationing. Apart from the fact that it tastes delicious, there’s an air of wholesomeness about carrot cake, a feeling that not only is it not bad for you but it’s actually doing you good!

Serves 8
175 g self raising flour
1 tsp baking powder
1 tsp cinnamon
¼ tsp salt
300 ml sunflower oil
350 g caster sugar
3 eggs
225 g grated carrots
100 g chopped walnuts
a few walnut halves to decorate

For the cream cheese frosting
175 g cream cheese
175 g butter
1 tsp vanilla bean paste
225 g icing sugar
1 Preheat the oven to 180ºC/Gas 4. Grease a muffin tray.
2 Sift together the (dried ingredients) self raising flour, baking powder, cinnamon and salt.
3 In a large bowl beat the oil with the caster sugar and beat in the eggs, one at time. Then fold in the dried ingredients and stir in the grated carrot and the chopped walnuts.
4 Place the mixture in the muffin tin, level off the top and bake for 25 minutes. Take the tray out of the oven and cool in the tin for 5 minutes.
5 While the muffins are cooling, beat together the cream cheese with the butter, then add the vanilla bean paste. Gradually add the icing sugar until the mixture is stiff but spreadable.
6 When the muffins are cool, use the icing to cover the top and decorate with walnuts and serve.

Já é desde os tempos medievais que as cenouras começaram a ser incluídas em receitas doces na Grã-Bretanha. Durante a Segunda Guerra Mundial devido á grande falta e racionamento de ingredientes, a cenoura tornou-se uma excelente alternativa ao açucar. Barata e facilmente disponível de encontar. Estes muffins são realmente deliciosos!

Para 8 pessoas
175 g de farinha com fermento
1 c. chá de fermento em pó
1 c. chá de canela em pó
¼ c. chá de sal
300 ml de óleo de girassol
350 g de açúcar fino
3 ovos
225 g cenouras raladas
100 g de nozes picadas
nozes para decorar
Para o creme de queijo glacé
175 g queijo para barrar tipo Philadelphia
175 g manteiga
1 c. chá de pasta de baunilha
225 g de açúcar glacé
1 Pré-aquecer o forno a 180º C/Gás 4. Unte com óleo uma forma para muffins.
2 Peneirar a farinha, fermento, canela e sal.
3 Numa tigela bater o óleo com o açúcar fino e adicionar os ovos, um de cada vez e misturar aos ingredientes secos. Adicionar as cenouras raladas, as nozes picadas e envolver tudo.
4 Coloque a massa nas forminhas e levar ao forno durante 25 minutos. Retire os muffins do forno e deixar arrefecer na forma durante 5 minutos.
5 Bater o queijo, juntamente com a manteiga e em seguida, adicione a pasta de baunilha. Gradualmente adicione o açúcar glacé até a mistura engrossar mas que fique com uma consistência fácil de barrar.
6 Quando os muffins estiverem frios, cubra com o creme de queijo e decore com as nozes.

175 g de harina con levadura
1 cucharadita de polvo para hornear
1 cucharadita de canela en polvo
¼ cucharadita de sal
300 ml de aceite de girasol
350 g de azúcar
3 huevos
225 g de zanahoria rallada
100 g de nueces picadas
nueces para decorar
Para la crema de queso frosting
175 g de queso Philadelphia
175 g de mantequilla
1 cucharadita de pasta de vainilla
225 g de azúcar glaseado
1 Pre-calentar el horno a 180ºC/Gas 4. Se unta con aceite de girasol una fuente para magdalenas.
2 Tamizar la harina, el polvo para hornear, la canela y la sal.
3 En un tazón batir el aceite de girasol con el azúcar y añadir los huevos uno a uno. Mezclar esto a los ingredientes secos. Añadir la zanahoria rallada y las nueces picadas, envolver bien.
4 Coloque la masa en la fuente y hornee durante 25 minutos. Retire la fuente del horno y dejar enfriar durante 5 minutos.
5 Batir el queso con la mantequilla y agregue la pasta de vainilla, por fin añadir poco a poco el azúcar glaseado.
6 Dejar enfriar completamente las magdalenas e despues barrarlas con la crema de queso frosting. Decorar con las nueces.
