Merry Christmas and Happy New Year 2011.
Dears friends and readers, I am taking the next couple of weeks off to spend time with my family. My lovely sister, mother, bother-in-law and their 11 months old baby daughter Joana are arriving in the UK. This Christmas will be my niece`s first Christmas. It is therefore imperative that we take every opportunity to bond with our family and make the most of our relations.
A family Christmas is the best kind of Christmas and once you had one, you`ll make it a point to enjoy every future Christmas with your family.
Many thanks for all your comments and visits, I could not do it without you.
See you in a couple of weeks!
Ingredients:
1 fruit cake
4 tbsp apricot jam, warmed and sieved
icing sugar, for dusting
500g pack marzipan
500g ready-to-roll white icing
100g ready-to-use royal icing
red ribbon
Christmas cake toppers

1 Sit the cake on a large board or flat serving plate. Brush a little of the jam over the cake. Dust a clean surface with a little icing sugar, then roll out the marzipan until big enough to cover the cake (use string to help you measure). Carefully lift the marzipan onto the cake, pat down to cover smoothly and trim any excess off the bottom. Brush all over again with more jam.
2 Roll out on an icing sugar over the marzipan. For a snow scene, spread the ready-to-use royal icing on top of the cake then, using a broad knife blade, lift it up into little peaks, making a rough surface.
3 Tie a red ribbon around the cake and decorate it with ornaments of your choice.

Feliz Natal e Próspero Ano Novo 2011.
Queridos amigos e leitores, estarei de férias nas próximas duas semanas.
A minha querida mana, cunhado, sobrinha e a minha mãe chegaram á Inglaterra.
