This salad is full of bright colours and exotic spices. If the rice in the salad seems a little though after being refrigerated, place it in a steamer basket over boiling water for about 5 minutes to soften and rehydrate.

Ingredients:
½ tsp cumin seeds
½ tsp coriander seeds
1 green cardamom pod
3 tbsp olive oil
2 tbsp chopped red onion
1½ cups / 340 g Basmati rice, rinsed
1 cinnamon stick
1 bay leaf
100 g chopped dates
100 g diced dried apricots
75 g golden raisins
75 g dried cherries or cranberries
150 ml fresh orange juice
¼ tsp salt
2 spring onions, white and green parts, thinly sliced
1 In a pan, briefly heat the cumin, coriander and cardamom over medium heat to toast. When the spices are fragrant, remove them from the pan and let cool. Grind the cumin, coriander and cardamom finely with a mortar and pestle.
2 Add 1 tbsp olive oil to the same pan and heat over medium heat, add the onion, cooking until tender. Add the rice, spices, cinnamon stick and bay leaf. Cook and stir until the rice is light golden and well coated with the oil. Mix in the dates, apricots, raisins and cherries.
3 Add the orange juice, 1½ cups water, salt, stirring briefly to combine. Bring the mixture to a boil over high heat, reduce the heat to low and cover for 15 minutes or until the rice is tender and has absorbed the liquid.
4 Using a large fork to fluff up the rice and fruit mixture, turn it into a serving dish, drizzle 2 tbsp oil and combine with a fork. Allow to cool, covered by a clean dish towel and serve at room temperature or chilled, sprinkled with the spring onions across the top.

Esta salada de arroz está repleta de cores brilhantes e especiarias exóticas. Se fizer o arroz de antemão, aconselho hidratá-lo a vapor por aproximadamente 5 minutos.

Ingredientes:
½ c. de chá de sementes de cominho½ c. de chá de sementes de coentro
1 vagem de cardamomo verde
3 c. de sopa de azeite
2 c. de sopa de cebola roxa picada
340 g de arroz basmati, lavado
1 pau de canela
1 folha de louro
100 g de tâmaras, picadas
100 g de damascos secos picados
75 g de passas de uva
75 g de cerejas ou mirtilos vermelhos secos
150 ml de sumo de laranja natural
¼ c. de chá de sal
2 cebolinhas, parte branca e verde, cortada em fatias finas
1 Numa panela a fogo médio, tostar rapidamente as sementes de cominho, coentro e cardamomo. Reservar e triturá-las com um pilão.
2 Na mesma panela, coloque uma colher de sopa de azeite de oliva e aqueça a fogo médio, junte a cebola, cozinhar até amaciar. Adicione o arroz, especiarias, pau de canela e a folha de louro. Envolva tudo cuidadosamente, até o arroz ficar revestido com o azeite. Adicione as tâmaras, damascos, passas e cerejas.
3 Adicione o sumo de laranja, 1 ½ xícaras de água, sal, e mexa rapidamente para combinar. Levante fervura, baixe o fogo e tape por 15 minutos ou até que o arroz esteja macio e absorvido o líquido.
4 Colocar o arroz numa numa travessa, regue com 2 colheres de sopa de azeite e combinar com um garfo. Deixe arrefecer e tapar com um pano de cozinha limpo. Servir a temperatura ambiente polvilhado com a cebolinha picada.

Ingredientes:
½ cucharadita de semillas de comino
½ cucharadita de semillas de cilantro1 vaina de cardamomo verde
3 cucharadas de aceite de oliva
2 cucharadas de cebolla roja, picada
340 g de arroz basmati, lavado
1 palillo de canela
1 hoja de laurel
100 g de datiles, picados
100 g de albaricoques secos, picados
75 g de pasas
75 g de cerezas o arándanos rojos, secos
150 ml de jugo de naranja
¼ cucharadita de té de sal
2 cebolletas, parte blanca y verde cortadas en rodajitas finas
1 Meter una cacerola a fuego medio y tostar rapidamente las semillas de comino, cilantro y cardamomos. Reservar y con un mortero combinar las especias tostadas en polvo.
2 En la misma cacerola, ponga una cucharada de aceite de oliva y calentar a fuego medio, agregue la cebolla, cocine hasta que esté suave. Agregue el arroz, las especias, la canela y el laurel. Envuelva todo con cuidado, hasta que el arroz este recubierto con el aceite. Añadir los datiles, los albaricoques, las pasas y las cerezas.
3 Añadir el jugo de naranja, 1 ½ tazas de agua, la sal y revolver rápidamente para combinar. Hervir y de inmediato bajar el fuego, tapar y cocer durante unos 15 minutos o hasta que el arroz esté tierno y se haya evaporado el líquido.
4 Coloque el arroz en una fuente, rociar con 2 cucharadas de aceite de oliva y mezclar todo con un tenedor. Dejar enfriar y cubrir con un paño de cocina limpio. Sirva a temperatura ambiente espolvoreado con las cebolletas.
